Unrefined Organic Coconut Oil
Coconut oil is a delicious tasting medium chain fatty acid. One of coconut oil’s star assets is called lauric acid. Coconut oil contains about fifty percent of the stuff, making it the most abundant natural source available. Unlike other saturated fats, these fatty acids do not circulate in the bloodstream, but are sent directly to the liver where they are immediately converted into energy, so the body uses the fat in coconut oil to produce energy, rather than to be stored as fat. Raw Local Oregon Honey
Ancient Egyptians farmed honey 3,000 years ago and considered bees the symbol of sacred femininity. Raw honey is the concentrated nectar of flowers that comes straight from the extractor; it is unheated, pure, unpasteurized, and unprocessed. An alkaline forming food, raw honey has the most nutritional value of all honey and contains amylase, an enzyme concentrated in flower pollen which helps predigest starchy foods. Because raw honey hasn’t been heated or processed it still contains the phytonutrients found in resins from the hive. As far as being a sweetener, it is composed of two simple sugars: glucose and fructose, which are absorbed differently than sugar, thus causing a slower, more gradual rise in blood sugar. Sprouted Organic Almonds
We use raw, California, organic almonds from Hummingbird Wholesale. We soak them overnight in pure water, initiating germination. This helps reduce enzyme inhibitors that make all nuts hard to digest. After soaking, the almonds are rinsed in a mild salt bath using non-iodized Celtic Sea Salt®, and dehydrated at 114° until they reach the perfect crunchiness. During this sprouting process they become more alkaline, more nutrient available, and easier to digest due the removal of that enzyme-inhibiting substance in their skin called phytic acid, and our body is able to reap the full benefits from these heart healthy, body loving nutrients.
Organic Raw Cacao Powder
Our utter and complete surrender to chocolate goes back thousands of years. Both the Mayan and Aztec used cacao in their royal and religious events, presenting cacao seeds as offerings to the gods and serving chocolate drinks during sacred ceremonies. Cacao powder is a product of the cacao bean, which is botanically the seed of the fruit of the cacao tree. The cacao seed is in a fleshy, berry-like fruit, also known as the cacao pod. Raw Cacao powder is made by mechanically pressing the liquor to expel most of the cacao butter from the bean, leaving a solid cake, which is then ground into cacao powder. This powder is where the vast majority of the chocolate flavor and the polyphenol antioxidants reside. Raw cacao powder has as a distinct flavor profile much closer to the fresh bean: fruity, acidic and earthy. Honey Mama’s sources raw cacao from Holy Kakow, who works directly with a co-op in Peru that grows, harvests and presses the raw organic cacao on site using no water.
Himalayan Pink Salt
We chose this salt for its flavor and texture characteristics, and for its ability to highlight and celebrate all the other ingredients in our bars with such pizazz! Himalayan crystal salt comes from a 250-million-year-old mine that was once a large ocean in the East Karakoram range of the Himalayan Mountains. What’s not to love?! Honey Mama’s sources its salt from a Washington company called Saltworks .
Unsweetened Shredded Coconut
We use organic, unsweetened, shredded coconut from Hummingbird Wholesale as a nut-free alternative for several of our bars. We love coconut, and use the oil in every single one of our bars. Shredded coconut is high in protein, fiber, iron, and zinc. Although the fat content is high, most are medium chain fatty acids, or MCFA’s. Benefits associated with MCFA’s include an increase in HDL cholesterol (that’s the good kind, folks), providing an immediate source of energy, increasing satiety, and increasing metabolic rate. Furthermore, the MCFAs in coconut, namely, lauric acid, caprylic acid, and capric acid are antimicrobial, antiviral and antifungal. In addition to these benefits, phenolic compounds in coconut act as antioxidants. MCFAs have been used to improve memory in Alzheimer’s patients as well as uncontrolled seizures in children. Plus–it just tastes so darn good, and pairs superbly with chocolate. And you all know how much we love chocolate.
Organic Alkalized Cocoa Powder
Cacao powder has been newly recognized as a superfood in its own right. It is literally a powerhouse of nutrients, including carbohydrates, protein, free form amino acids, essential fats and fatty acids, and minerals. Its high levels of bioflavonoids make it one of the richest food sources of antioxidants on earth. Our alkalized cocoa is obtained from the grinding of Non-GMO, sound and ripe previously-cleaned, shelled, roasted organic cocoa beans (Theobroma Cacao). This Dutch process, or alkalizing, reduces acidity and bitterness, darkens the cocoa and gives it a a richer, silkier flavor. We choose Agostoni alkalized cocoa powder for it’s dedication to quality, integrity of process and sustainable business practices.
Organic Saigon Cinnamon
What’s not to love about this ancient, coveted spice? It brings a spicy, earthy, nurturing flavor to food. Saigon cinnamon, in particular, has a 5% oil content, giving it a spicier “red hot” flavor compared to the rounded out, earthy profile of Ceylon cinnamon, and that’s why we chose it. Well-balanced and nostalgic, with a little kick to boot, this spice is hands down a Honey Mama’s favorite.
La Vencedora Vanilla Flavor
This highly concentrated liquid Mexican vanilla flavoring from La Vencedora is of fine taste and quality! It is water processed to give the smoothest flavor, with the only alcohol being that which is naturally occurring in the vanilla at less than 3%. It is called a “flavoring” because of the near-zero alcohol content (“extracts” are made using an alcohol based process, and can have 30% or more alcohol in the finished product.) The people who import large containers of this vanilla into the U.S. package it into the bottles in Portland and periodically travel to Mexico to be sure their vanilla meets the highest standards with no cumarin, additives, or preservatives – just pure natural water-processed vanilla flavor. The Romans grew peppermint and used it as a ground cover between stepping stone pathways because they enjoyed the pleasant aroma, and loved that guests were greeted with this scent as they entered a home or a courtyard. Peppermint has an elegant and buoyant nature that is truly in a league of it’s own. Honey Mama’s sources it’s peppermint oil from Seely Family Farm in Clatskanie, Oregon, a secluded valley nestled between the coast range and the Columbia River. The combination of mild coastal climate and dark river bottom soil yield a sweeter, smoother mint of superior flavor and premium quality. Additionally, the mint is harvested only once each summer, when it has matured, and the flavor components are at their optimum, balanced levels. Sustainable practices handed down through three generations of Seely family mint farmers allow them to keep the fields healthier and in production longer than others, bringing you the essence of Oregon.
Organic Cayenne Powder
What a lovely spice that commands respect. Cayenne comes from dried and ground chili peppers, all containing capsaicin! The sophisticated character it brings to cocoa or any other food for that matter is wonderfully spicy, exciting, and stimulating! Yowza Yum! We love this ingredient.
Maillette Lavender Oil
This lavender is grown with great care and steam distilled in a stainless steel distiller. No pesticides, fertilizers, or composts are used on this crop which is all weeded by hand. You can taste the love in this sweet-herbaceous and woodsy oil. Our source is Willakenzie Lavender from Yamhill, Oregon.
Single Origin Roasted Cacao Nibs
We use Peruvian single origin roasted cacao nibs for our Nibs & Coffee bar. We chose roasted nibs instead of raw, as we found the roasted variety to have a superior flavor, as well as a delightfully crunchy texture. We source our nibs from Holy Kakow, the same place as our Peruvian raw cacao powder.
We use single-origin, direct-trade coffee for our Nibs and Coffee bar. The coffee is organically grown, but not certified Organic as the farm is very small. It is Direct Traded, which means our supplier buys it directly from the farmers to ensure a higher than market value price is paid directly to the farmer. Single origin means it is not a blend of different regional beans, but rather one varietal, so you get a lot of complexity and distinction in the flavor profile. We source our coffee beans through Deft Coffee in Portland, Oregon.
The rose has been valued for its beauty and its perfume for thousands of years. Because rose oil deteriorates rapidly with exposure to sun and wind, the content is highest on the first morning when the flower opens. Rose petals chosen for distillation are picked manually on a daily basis, at sunrise or just before. We source our rose petals from San Francisco Herb Co. in San Francisco, CA.
